- 3 tsp dome cumin
- 2 tsp ground coriander
- 400g can crushed tomatoes

- 50g dark chocolate (preferably 85% cocoa), finely chopped (see Notes)
- 2 tbsp Coles Brand Brown Sugar
- 1/2 cup coriander sprigs

The instruction how to make Chicken mole
- Preheat oven to 200C (180C fan-forced)
- Heat the oil in a large flameproof roasting pan higher than high heat. Season the chicken and cook, in 2 batches, for 5-8 mins or until well browned all over. Transfer to a plate. Discard fat from pan, reserving 1 tbsp. Heat reserved fat in the pan on top of higher than high heat. Cook onion, chilli, garlic and sesame seeds for 10-15 mins or until onion is soft and blackens slightly. go to paprika, cumin and ground coriander. Cook for 1 min or until fragrant. cut off surgically remove from heat. ensue tomatoes and stock. fusion or process sauce until smooth. Season.
- Return the chicken to the pan and pour exceeding the sauce. Bake for 25-30 mins or until chicken is just cooked through.
